Holiday Roasted Pumpkin Seeds

How to Successfully and Safely Roast Pumpkin Seeds


There are many things that roasted pumpkin seeds can be used for. Before pumpkin seeds are ready for those many uses they must be properly roasted. Here's how to do that easily, successfully and safely.

Roasted Pumpkin Seeds

Ingredients:

* 1 pumpkin
* Olive Oil 
* Salt - Sea Salt preferred
* Soy Sauce - sweet or regular to taste
* Chili Powder - if needed to add spicy hot taste
    Directions:

    Make sure the pumpkin seeds are NOT washed in any way after removal from your pumpkin. Washing will ruin the seeds for roasting.
    Spread the pumpkin seeds on a baking tray.
    Sprinkle the pumpkin seeds freely with olive oil, salt and the soy sauce of your choice. Make certain the seeds are all covered.
    Lightly sprinkle chili powder to taste. It does not take much so beware.
    Roast at 375 degrees F for 20 minutes, or until nicely browned and crispy. You may want, at the 2/3 time point to pull the tray, be careful - it's hot, and toss the seeds so that both sides will be browned.
    When time is up - take out of oven and let sit to cool down a bit.

Bonus - Alternate Uses for Roasted Pumpkin Seeds


Add sweetness to your salad. Toss the seeds with  olive oil, a teaspoon of melted butter, sugar, cinnamon, and ginger. Roast in the oven at 350 for 15 minutes, sprinkle with salt if desired and then toss them in a big spinach salad.


Make a pesto. Combine 1/3 cup of lightly toasted pumpkin seeds, 2 jalapeno peppers, 1 cup fresh cilantro, 1/4 cup reduced-fat sour cream, 1 teaspoon of lime juice and a sprinkle of salt. Blend in a food processor until soft and creamy. Serve with enchiladas or homemade pita chips.


Add some on top of your cereal or oatmeal. Mix in a handful of pumpkin seeds that have been lightly toasted with a sprinkle of sugar and cinnamon with your morning meal for a boost of protein and iron throughout the day.


Encrust your fish or tofu. Ground pumpkin seeds can add a delicious crunch and flavor to fish, tofu or even chicken.
